Autumn Apple Veggie Pasta

1 Summer Squash
1-2 Shallots
1 Honey Crisp Apple
1.5 tbsp Sesame Oil
2 tbsp Pinot Grigio
1 small bulb of Fennel
12-15 Brussel Sprouts
1/2 tsp of Garlic Powder, Sage
1/4 tsp of Salt, Pepper
5 cloves of Garlic
1/2 cup of Wasabi Peas
1/4 cup of Pistachios


  1. Cut and spiralize squash
  2. Dice shallots, fennel, apple, and garlic cloves
  3. Chop brussels sprouts in half
  4. Set your oven to a high broil and bake brussels sprouts for 10 minutes
  5. In a pan, heat oil and add shallots, fennel, apple, garlic cloves, and sage
  6. Let cook for 10 minutes, then add spiralized squash, brussels sprouts, and garlic powder
  7. Salt and pepper to taste and then cook for another 10 minutes
  8. Stir in wasabi peas and pistachios
