Autumn Apple Veggie Pasta

Ingredients:
1 Summer Squash
1-2 Shallots
1 Honey Crisp Apple
1.5 tbsp Sesame Oil
2 tbsp Pinot Grigio
1 small bulb of Fennel
12-15 Brussel Sprouts
1/2 tsp of Garlic Powder, Sage
1/4 tsp of Salt, Pepper
5 cloves of Garlic
1/2 cup of Wasabi Peas
1/4 cup of Pistachios
Directions:
- Cut and spiralize squash
- Dice shallots, fennel, apple, and garlic cloves
- Chop brussels sprouts in half
- Set your oven to a high broil and bake brussels sprouts for 10 minutes
- In a pan, heat oil and add shallots, fennel, apple, garlic cloves, and sage
- Let cook for 10 minutes, then add spiralized squash, brussels sprouts, and garlic powder
- Salt and pepper to taste and then cook for another 10 minutes
- Stir in wasabi peas and pistachios
